Description
A cold, refreshing salad of juicy watermelon, salty feta cheese, and fresh mint, tossed in a light lemon and olive oil dressing.
Ingredients
3 pounds seedless watermelon, rind removed, cut into 1-inch chunks 1 tablespoon fresh lemon juice, plus 4 strips lemon zest 1/4 cup fresh mint leaves, roughly chopped 3 tablespoons extra-virgin olive oil, plus more for drizzling 2 cups arugula leaves (optional) Kosher salt and freshly ground black pepper, to taste 4 ounces feta cheese, crumbled
Instructions
- Place watermelon chunks in a large bowl. Add lemon juice, half the zest, mint, olive oil, and arugula if using. Toss gently until coated. Season lightly with salt and pepper.
- Transfer to a wide serving bowl and spread evenly. Crumble feta over the top. Sprinkle with remaining zest, drizzle with olive oil, and add a few grinds of pepper. Serve immediately.
Notes
Use block feta packed in brine rather than pre-crumbled feta for the best texture. Add arugula for a heartier salad.
