Description
This Taco Casserole with ground beef and tortilla chips is a crowd-pleasing, layered bake that combines seasoned beef, hearty chili beans, tangy salsa, cool sour cream, and melted Cheddar cheese in one bubbling dish. Ready in about an hour with minimal prep, it delivers bold taco flavor without the mess of individual taco assembly.
Ingredients
- 1 pound lean ground beef
- 2 cups salsa
- 1 (16 ounce) can chili beans, drained
- 3 cups tortilla chips, crushed
- 2 cups sour cream
- 1 (2 ounce) can sliced black olives, drained
- ½ cup chopped green onion
- ½ cup chopped fresh tomato
- 2 cups shredded Cheddar cheese
Instructions
- Gather all ingredients and preheat the oven: Set oven to 350°F (175°C). Spray a 9×13-inch baking dish with cooking spray.
- Brown the ground beef: Heat a large skillet over medium-high heat. Cook and stir ground beef until browned and crumbly, 8 to 10 minutes. Drain excess fat.
- Simmer with salsa: Stir in salsa, reduce heat to low, and simmer until liquid is mostly absorbed, about 20 minutes.
- Add the beans: Stir in drained chili beans and cook until heated through, about 2 minutes.
- Layer the casserole: Spread crushed tortilla chips evenly over the bottom of the prepared baking dish. Spoon the beef and bean mixture on top.
- Add sour cream and toppings: Spread sour cream over the beef layer, then sprinkle black olives, green onions, and fresh tomato over the top.
- Cover with cheese: Distribute shredded Cheddar cheese evenly over the entire casserole.
- Bake: Bake in the preheated oven until hot and bubbly and the cheese is melted, about 30 minutes.
- Serve: Remove from oven and let rest 5 minutes before serving with chips and salsa.
Notes
Do not crush the tortilla chips too finely, quarter-sized pieces hold their texture better during baking. Ground turkey works as a direct substitute for ground beef without changing the cooking times. Store leftovers in an airtight container for up to 3 days; reheat individual portions in the microwave covered with a damp paper towel to keep the cheese moist.
