Description

Sweet potato casserole is a creamy, buttery baked dish made with mashed orange yams, rich custard filling, and a golden brown sugar pecan crumble topping. It comes together in about an hour and delivers the kind of crowd-pleasing comfort that makes it a guaranteed repeat at every holiday table.

Ingredients

Scale
  • 45 large sweet potatoes (orange yams)
  • 3 large eggs
  • 1/2 cup evaporated milk (or substitute cream or half and half)
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/4 cup butter, melted
  • For the Topping:
  • 3 tablespoons butter
  • 1/4 cup all-purpose flour
  • 1 cup light brown sugar
  • 1 cup pecans, chopped

Instructions

  1. Cook the Sweet Potatoes: Place sweet potatoes in a large pot. Add water to cover at least halfway (3–4 inches). Bring to a boil, then reduce to a medium simmer. Cover and cook until tender when poked with a fork, 20–40 minutes depending on size. Do not overcook to mushiness.
  2. Peel and Cool: Drain and transfer potatoes to a plate or cutting board. Once cool enough to handle, peel off the skins and place the flesh in a large mixing bowl.
  3. Mix the Filling: Add eggs, evaporated milk, vanilla extract, granulated sugar, salt, and melted butter to the bowl. Mash everything together with a potato masher, then use an electric mixer on low speed for about 45 seconds until smooth.
  4. Pour into Casserole Dish: Transfer the mixture to a lightly greased casserole dish (8×11”, 9×13”, or deep-dish 10” pie pan).
  5. Make the Pecan Topping: Combine flour, brown sugar, and chopped pecans in a bowl. Add butter and cut in with a fork or pastry blender until the mixture resembles coarse crumbs. Sprinkle evenly over the sweet potato mixture.
  6. Bake: Bake at 350°F (175°C) for 35–40 minutes, until the topping is golden and the filling is set.

Notes

Do not let the potatoes get mushy during boiling, tender but firm is the goal before mashing. For the creamiest filling, use evaporated milk rather than regular milk. The pecan topping can be made 1 day ahead and stored covered in the refrigerator. Leftovers keep well in the refrigerator for 4–5 days.
