  • For the Cowboy Butter
  • 1/2 cup (1 stick) salted butter, softened
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 2 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon Dijon mustard
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon coarse salt
  • 1/2 teaspoon ground black pepper
  • For the Steak
  • 2 ribeye steaks, about 1 1/2 inches thick
  • Salt and pepper to taste

Instructions

  1. Make the Cowboy Butter: In a medium bowl, cream together butter, lemon zest, lemon juice, garlic, red pepper flakes, Dijon mustard, parsley, salt, and black pepper. Taste and adjust seasoning. Place butter on plastic wrap, shape into a log, and refrigerate for at least 1 hour.
  2. Prepare the Steak: Remove steaks from the refrigerator and let them sit at room temperature for 30 minutes. Pat dry and season both sides generously with salt and pepper.
  3. Grill Method: Preheat grill to high heat. Grill steaks for 3 minutes per side to sear, then reduce heat and cook 4–6 minutes more until internal temperature reaches 145–155°F for medium.
  4. Oven Method: Preheat oven to 475°F. Heat a cast iron skillet over high heat. Sear steaks for 3 minutes per side, then transfer skillet to oven and cook 4–6 minutes more.
  5. Serve: Let steaks rest for 5 minutes, then top each with 2 tablespoons of cowboy butter just before serving.

Notes

Cowboy butter freezes well and can be made ahead. Freeze the butter only and cook steaks fresh for best texture. Ribeye works best, but top sirloin is a great option for a leaner cut.
