Ingredients

  • 2 boneless skinless chicken breasts
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (15-oz) can corn, undrained
  • 1 (10-oz) can Rotel diced tomatoes with green chilies, undrained
  • 1 (1-oz) packet ranch dressing mix
  • 1 tsp cumin
  • 1 Tbsp chili powder
  • 1 tsp onion powder
  • 8 oz cream cheese block

Instructions

  1. Layer the Ingredients: Place chicken breasts at the bottom of a slow cooker. Add black beans, corn, and Rotel tomatoes on top. Sprinkle with ranch dressing mix, cumin, chili powder, and onion powder. Stir lightly.
  2. Add the Cream Cheese: Place the block of cream cheese on top of the mixture. Cover with lid.
  3. Cook Low and Slow: Cook on low for 6–8 hours, until chicken is tender.
  4. Shred the Chicken: Remove the chicken, shred with two forks, and return to the pot.
  5. Mix Smooth: Whisk the melted cream cheese into the chili until fully combined and creamy.
  6. Serve: Stir shredded chicken back into chili and serve with toppings like cheese, cilantro, tortilla chips, or avocado.

Notes

For a thinner chili, stir in 1 cup chicken broth before serving. Philadelphia cream cheese melts best for a smooth finish. Leftovers keep in the fridge for 4 days or freeze up to 3 months. You can prep this as a freezer meal by combining all ingredients (except cream cheese) in a bag and cooking from frozen later.
