  • 4 teaspoons capers, drained
  • 1 small lemon, zested and juiced
  • 1 pound asparagus, trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt, divided
  • Freshly ground black pepper
  • 4 salmon fillets (about 6 ounces each, skinless or skin-on)

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F and position a rack in the center.
  2. Make the Lemon Caper Butter: In a small bowl, mash the softened butter with capers and lemon zest until combined.
  3. Prepare the Asparagus: Arrange asparagus on a rimmed baking sheet. Drizzle with olive oil, season with half the salt and black pepper, and toss to coat. Spread around the edges of the pan.
  4. Season the Salmon: Season salmon fillets with the remaining salt and black pepper. Place them in the center of the baking sheet.
  5. Add the Butter: Divide the lemon caper butter among the salmon fillets, spreading gently over the top.
  6. Roast: Roast until the asparagus is tender and the salmon flakes easily, about 10–15 minutes, or until the salmon reaches 120–130°F.
  7. Finish and Serve: Drizzle with fresh lemon juice and serve immediately.

Notes

Use medium or thin asparagus so it cooks at the same pace as the salmon. For best texture, avoid overcooking the salmon and reheat leftovers gently.
