Ingredients
- 4 tablespoons unsalted butter, softened
- 4 teaspoons capers, drained
- 1 small lemon, zested and juiced
- 1 pound asparagus, trimmed
- 2 tablespoons olive oil
- 1 teaspoon sea salt, divided
- Freshly ground black pepper
- 4 salmon fillets (about 6 ounces each, skinless or skin-on)
Instructions
- Preheat the Oven: Preheat the oven to 400°F and position a rack in the center.
- Make the Lemon Caper Butter: In a small bowl, mash the softened butter with capers and lemon zest until combined.
- Prepare the Asparagus: Arrange asparagus on a rimmed baking sheet. Drizzle with olive oil, season with half the salt and black pepper, and toss to coat. Spread around the edges of the pan.
- Season the Salmon: Season salmon fillets with the remaining salt and black pepper. Place them in the center of the baking sheet.
- Add the Butter: Divide the lemon caper butter among the salmon fillets, spreading gently over the top.
- Roast: Roast until the asparagus is tender and the salmon flakes easily, about 10–15 minutes, or until the salmon reaches 120–130°F.
- Finish and Serve: Drizzle with fresh lemon juice and serve immediately.
