Description
This pizza casserole recipe is an easy, 5-ingredient, one-pan dinner loaded with roasted cauliflower, rich marinara sauce, melty mozzarella, and crispy pepperoni slices. Ready in just 45 minutes, it is a guaranteed family favorite that satisfies every pizza craving without the takeout box.
Ingredients
- 1 large head cauliflower, cut into small florets (about 3/4 to 1 inch in size)
- 2 tbsp olive oil
- 2 tsp Italian seasoning (optional)
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1 1/2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 2 oz pepperoni slices (beef pepperoni)
Instructions
- Preheat the Oven: Set the oven to 425°F (218°C) and position the rack in the center.
- Season the Cauliflower: In a 9×13 inch (23×33 cm) casserole dish, toss the cauliflower florets with olive oil, Italian seasoning, sea salt, and black pepper. Spread into a single even layer.
- Roast the Cauliflower: Roast for 25 minutes, tossing once halfway through, until tender and lightly golden. Keep the oven on after removing the dish.
- Add the Sauce and Toppings: Pour marinara sauce evenly over the roasted cauliflower. Sprinkle mozzarella cheese across the top, then arrange pepperoni slices in a single layer.
- Bake Until Golden: Return the casserole to the oven and bake for 10–15 minutes, until the cheese is fully melted and golden at the edges.
- Rest and Serve: Let the casserole rest for 5 minutes before slicing and serving. Garnish with fresh parsley if desired.
Notes
Pat the cauliflower florets dry before roasting to avoid a watery casserole. Use a full-fat, low-moisture mozzarella for the best melt. For a shortcut, buy pre-cut cauliflower florets from the produce section. Leftovers keep well covered in the baking dish for 2 to 3 days, or in an airtight container for up to 4 days.
