Description

Ingredients

  • 1 large head cauliflower, cut into small florets (about 3/4 to 1 inch in size)

  • 1/4 tsp black pepper
  • 1 1/2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 2 oz pepperoni slices (beef pepperoni)


Instructions

  1. Preheat the Oven: Set the oven to 425°F (218°C) and position the rack in the center.
  2. Season the Cauliflower: In a 9×13 inch (23×33 cm) casserole dish, toss the cauliflower florets with olive oil, Italian seasoning, sea salt, and black pepper. Spread into a single even layer.
  3. Roast the Cauliflower: Roast for 25 minutes, tossing once halfway through, until tender and lightly golden. Keep the oven on after removing the dish.
  4. Add the Sauce and Toppings: Pour marinara sauce evenly over the roasted cauliflower. Sprinkle mozzarella cheese across the top, then arrange pepperoni slices in a single layer.
  5. Bake Until Golden: Return the casserole to the oven and bake for 10–15 minutes, until the cheese is fully melted and golden at the edges.

Notes

Pat the cauliflower florets dry before roasting to avoid a watery casserole. Use a full-fat, low-moisture mozzarella for the best melt. For a shortcut, buy pre-cut cauliflower florets from the produce section. Leftovers keep well covered in the baking dish for 2 to 3 days, or in an airtight container for up to 4 days.
