Buttery shortbread crust topped with gooey pecan filling, these pecan pie bars are the perfect easy dessert for holidays or any occasion.
Ingredients
For the crust:
Cooking spray
8 tablespoons unsalted butter, room temperature
1/4 cup granulated sugar
1/2 teaspoon kosher salt
1 cup all-purpose flour, plus more for dusting
For the filling:
3/4 cup dark or light corn syrup
1/4 cup packed brown sugar
2 large eggs
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
1 1/2 cups pecan pieces
Instructions
1. Preheat oven to 350°F and prepare an 8×8-inch baking pan lined with parchment paper.
2. Cream butter, sugar, and salt until smooth. Mix in flour until crumbly dough forms.
3. Press dough evenly into pan. Bake crust for 20–22 minutes until golden.
4. Whisk together corn syrup, brown sugar, eggs, flour, vanilla, and salt. Stir in pecans.
5. Pour mixture over hot crust. Bake 25–30 minutes until filling is set and golden.
6. Cool completely, then refrigerate for 1 hour before cutting into bars.
Notes
Store in an airtight container in the fridge for up to 4 days or freeze for 3 months. Thaw before serving.
