Ingredients

Peach Filling
6 cups sliced fresh peaches
1/3 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract

Oat Topping
1 cup old-fashioned rolled oats
3/4 cup all-purpose flour
2/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, cold and cubed


Instructions

1. Preheat oven to 350°F and grease a 9×13-inch baking dish.
2. Peel and slice peaches; toss with lemon juice.
3. Mix in sugar, cornstarch, cinnamon, salt, and vanilla; pour into dish.
4. Combine oats, flour, brown sugar, cinnamon, and salt.
5. Cut in cold butter until coarse crumbs form.
6. Sprinkle topping over filling.
7. Bake 35-40 minutes until golden and bubbling.
8. Cool 15 minutes before serving.

Notes

Increase cornstarch by 1 teaspoon for very juicy peaches. Keep butter cold for the crispest topping. Can be assembled a day ahead and refrigerated before baking.
