  • 1 cup thinly sliced zucchini
  • 1 cup halved cherry tomatoes
  • 1/3 cup sliced green onions
  • 1/4 cup sliced pepperoncini (optional)
  • 1 cup mixed olives
  • 1 cup grated parmesan cheese
  • 1 cup fresh mozzarella balls, chopped
  • 1/3 cup fresh parsley or basil (optional)
  • 1/3 cup red wine vinegar
  • 1/2 cup extra-virgin olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 23 tablespoons pepperoncini juice (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook until tender according to package instructions. Drain and rinse under cold water.
  2. Prepare the Dressing: In a large bowl, whisk together vinegar, salt, pepper, oregano, and pepperoncini juice. Slowly add olive oil while whisking until combined.
  3. Combine Pasta and Dressing: Add the cooled pasta to the bowl and toss thoroughly so the pasta absorbs the dressing.
  4. Add Mix-Ins: Stir in bell pepper, zucchini, tomatoes, green onions, olives, parmesan, mozzarella, and herbs.
  5. Adjust and Chill: Taste and adjust seasoning with salt and pepper. Cover and refrigerate for at least 30 minutes before serving.

Notes
