- 1 pound dried pasta (rotini, penne, fusilli, or farfalle)
- 1 cup sliced bell pepper
- 1 cup thinly sliced zucchini
- 1 cup halved cherry tomatoes
- 1/3 cup sliced green onions
- 1/4 cup sliced pepperoncini (optional)
- 1 cup mixed olives
- 1 cup grated parmesan cheese
- 1 cup fresh mozzarella balls, chopped
- 1/3 cup fresh parsley or basil (optional)
- 1/3 cup red wine vinegar
- 1/2 cup extra-virgin olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 2–3 tablespoons pepperoncini juice (optional)
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook until tender according to package instructions. Drain and rinse under cold water.
- Prepare the Dressing: In a large bowl, whisk together vinegar, salt, pepper, oregano, and pepperoncini juice. Slowly add olive oil while whisking until combined.
- Combine Pasta and Dressing: Add the cooled pasta to the bowl and toss thoroughly so the pasta absorbs the dressing.
- Add Mix-Ins: Stir in bell pepper, zucchini, tomatoes, green onions, olives, parmesan, mozzarella, and herbs.
- Adjust and Chill: Taste and adjust seasoning with salt and pepper. Cover and refrigerate for at least 30 minutes before serving.
- Serve: Toss again before serving and add extra dressing if needed to refresh the salad.
Notes
Use pasta shapes with ridges to hold dressing better. For a creamy pasta salad version, add mayonnaise or Greek yogurt. Store leftovers in the fridge for up to 5 days and refresh with extra dressing before serving.
