  • 3 large boneless, skinless chicken breasts, sliced into thin cutlets
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 6 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup chicken stock
  • 1 cup heavy cream (double cream)
  • 1/2 cup freshly grated parmesan cheese
  • 1 teaspoon chili flakes
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/3 cup sundried tomatoes, chopped
  • 1 tablespoon fresh basil, chopped

Instructions

  1. Season and Dredge: Season chicken cutlets with salt and pepper, then lightly dredge in flour.
  2. Sear the Chicken: Heat olive oil and butter in a skillet. Cook chicken 4–5 minutes per side until golden. Remove and set aside.
  3. Sauté Garlic: Cook garlic until fragrant, about 1 minute.
  4. Deglaze: Add chicken stock and scrape browned bits.
  5. Build Sauce: Lower heat and stir in cream and parmesan.
  6. Season: Add chili flakes, oregano, thyme, salt, and pepper.
  7. Finish: Add sundried tomatoes, return chicken, and simmer until sauce thickens.
  8. Serve: Garnish with basil and serve warm.

Notes

Use heavy cream for proper sauce thickness. Freshly grated parmesan melts best. Store leftovers up to 3 days and reheat gently with added liquid.
