Ingredients
- 3 large boneless, skinless chicken breasts, sliced into thin cutlets
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 6 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 cup chicken stock
- 1 cup heavy cream (double cream)
- 1/2 cup freshly grated parmesan cheese
- 1 teaspoon chili flakes
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- 1/3 cup sundried tomatoes, chopped
- 1 tablespoon fresh basil, chopped
Instructions
- Season and Dredge: Season chicken cutlets with salt and pepper, then lightly dredge in flour.
- Sear the Chicken: Heat olive oil and butter in a skillet. Cook chicken 4–5 minutes per side until golden. Remove and set aside.
- Sauté Garlic: Cook garlic until fragrant, about 1 minute.
- Deglaze: Add chicken stock and scrape browned bits.
- Build Sauce: Lower heat and stir in cream and parmesan.
- Season: Add chili flakes, oregano, thyme, salt, and pepper.
- Finish: Add sundried tomatoes, return chicken, and simmer until sauce thickens.

Notes
Use heavy cream for proper sauce thickness. Freshly grated parmesan melts best. Store leftovers up to 3 days and reheat gently with added liquid.
