- 1 to 1.25 cups chopped kimchi
- 1 cup cooked and diced chicken, beef, or steak (optional)
- 3 tablespoons paleo gochujang (or tomato paste or paleo ketchup for mild option)
- 1–2 tablespoons kimchi juice
- Coarse salt to taste
- 1 tablespoon water
- Optional toppings: toasted sesame oil, chopped scallions, sesame seeds or furikake, fried or soft eggs, sliced nori

Instructions
- Sauté the Kimchi: Preheat a skillet over low heat. Add cooking fat and chopped kimchi. Cook for 2–3 minutes until moisture cooks off.
- Build the Sauce: Mix paleo gochujang with kimchi juice. Add optional protein and stir until coated.
- Add Cauliflower Rice: Add cauliflower rice and a small pinch of salt. Stir well to coat evenly.
- Steam Lightly: Add 1 tablespoon water, cover, and cook over medium-low heat for 1 minute until tender but not soft.
- Finish and Serve: Remove from heat. Top with sesame oil, scallions, eggs, or nori as desired.

Notes
Keep cauliflower rice dry for best texture. Taste kimchi before cooking and adjust salt if needed. For a quick mild sauce, combine paleo ketchup with coconut aminos and chili powder. Nutrition is calculated without toppings.
