- 2 tablespoons fresh parsley, chopped
- 1/2 cup freshly grated parmesan cheese
- Pepperoncinis, sliced (optional)
- 3/4 cup olive oil
- 1/4 cup apple cider vinegar or white vinegar
- 2 teaspoons dried parsley flakes
- 2 teaspoons dried minced onion
- 2 teaspoons fresh lemon juice
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon garlic salt
- 1 teaspoon sugar
- 1/4 teaspoon black pepper
Instructions
- Prepare the Dressing: In a jar or bowl, combine olive oil, apple cider vinegar or white vinegar, dried parsley, dried onion, lemon juice, basil, oregano, garlic salt, sugar, and black pepper. Shake or whisk until fully blended.
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook rotini until al dente according to package instructions. Drain and rinse with cold water, then allow to cool.
- Start the Base: Add cooled pasta to a large mixing bowl and pour half of the dressing over it. Toss well to coat evenly.
- Add Ingredients: Add mozzarella, salami, olives, onion, tomatoes, parsley, parmesan, and optional pepperoncinis.
- Finish and Toss: Pour remaining dressing over the salad and toss thoroughly until all ingredients are evenly combined.
- Chill and Serve: Cover and refrigerate for at least 1 hour. Stir before serving and adjust dressing if needed.
