Description
This Instant Pot Curried Carrot Soup is a cozy, creamy blend of sweet carrots, warm curry spice, and coconut milk. Made in under an hour, this soup is perfect for meal prep, cold nights, or when you need something quick, nourishing, and full of flavor.
Ingredients
- 3 tablespoons olive oil
- 1 large onion, chopped
- 1 tablespoon curry powder
- 1 teaspoon dried thyme leaves
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 5 cloves garlic, chopped
- 2 pounds carrots, peeled and chopped
- 2 cups reduced-sodium vegetable broth
- 1 tablespoon apple cider vinegar
- 2 teaspoons granulated sugar
- 1 cup canned coconut milk (well-shaken)
Instructions
- Sauté Aromatics: Set Instant Pot to “Sauté” mode. Add olive oil and onion. Cook for 4 minutes, then stir in curry powder, thyme, salt, and pepper. Add garlic and cook for 1 minute.
- Add Carrots: Add chopped carrots and sauté for 3 more minutes to enhance flavor.
- Deglaze and Add Liquids: Add a splash of broth to deglaze the pot, scraping up any brown bits. Add remaining broth, vinegar, and sugar. Stir to combine.
- Pressure Cook: Lock the lid, set valve to sealing, and cook on Manual High Pressure for 12 minutes. Let pressure release naturally for 15 minutes.
- Blend: Use an immersion blender to blend the soup until mostly smooth. Stir in the coconut milk and blend again to desired consistency.
- Adjust and Serve: Taste and adjust seasoning. Garnish with pumpkin seeds, herbs, or a swirl of coconut milk if desired.
Notes
For a spicier version, add a teaspoon of red curry paste. If coconut milk isn’t available, substitute with cashew cream or heavy cream. To keep it vegan, use vegetable broth and plant-based garnishes.
