Instructions

  1. Pound the Chicken: Place each chicken breast between two sheets of plastic wrap and pound to an even ¾-inch thickness using a meat mallet or heavy skillet.
  2. Mix the Marinade: Whisk honey, soy sauce (or tamari), lime juice, and olive oil together in a large bowl or zipper-top bag. Add cayenne and kosher salt if using.
  3. Marinate the Chicken: Submerge chicken in the marinade, seal or cover, and refrigerate for at least 2 hours and up to 12 hours. Rotate once if any pieces poke above the surface.
  4. Prep the Grill: Remove chicken from the refrigerator 20–30 minutes before cooking. Preheat grill to medium-high (400–450°F) and oil the grates.
  5. Grill the Chicken: Remove chicken from marinade, letting excess drip off. Discard used marinade. Grill for 4–6 minutes per side undisturbed until internal temperature reaches 165°F and the exterior is golden and caramelized.
  6. Rest and Serve: Transfer to a clean plate, tent with foil, and rest for 5 minutes. Garnish with lime slices and fresh herbs before serving.

Notes

Pound chicken to an even thickness for the most consistent cooking results. Do not marinate beyond 12 hours, the lime juice will begin to break down the texture. Always discard the used raw marinade; mix a fresh small batch if you want a finishing drizzle. For extra flavor, dip the chicken in a fresh batch of marinade right before flipping to the second side on the grill.
