High-Protein Cottage Cheese Banana Bread

  • Author: Chef Abra
  • Total Time: 1 hour
  • Yield: 10 slices 1x

Description

This High-Protein Cottage Cheese Banana Bread is a moist, nutritious twist on the classic. Made with ripe bananas, creamy cottage cheese, and almond flour, it’s a high-protein, naturally sweet bread that’s perfect for breakfast, snacks, or meal prep. Each slice delivers lasting energy and flavor with no refined sugar or oil.

Ingredients

Scale
  • 2 ripe bananas, mashed
  • 3 large eggs
  • 1/2 cup cottage cheese (small-curd or whipped)
  • 3 tablespoons maple syrup (adjust to taste)
  • 2 teaspoons vanilla extract
  • 2 1/2 cups almond flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • Optional: 1/4 cup chopped walnuts, chocolate chips, or blueberries

Instructions

  1. Preheat the Oven: Set the oven to 350°F (175°C). Line a loaf pan with parchment paper and lightly grease it to prevent sticking.
  2. Combine Wet Ingredients: In a large bowl, mash the ripe bananas until smooth. Add the eggs, cottage cheese, maple syrup, and vanilla extract. Whisk until creamy and well blended.
  3. Add the Dry Ingredients: Stir in almond flour, baking soda, and cinnamon. Mix until fully combined and the batter is thick and smooth.
  4. Add Optional Mix-ins: Fold in any walnuts, chocolate chips, or blueberries for extra flavor and texture.
  5. Bake the Bread: Pour the batter into the prepared loaf pan. Bake for 50 minutes, covering loosely with foil after 30 minutes if the top browns too quickly.
  6. Cool and Serve: Remove from the oven and let cool in the pan for 10 minutes. Transfer to a wire rack to cool completely before slicing.

Notes

For the best texture, use small-curd cottage cheese or blend it before mixing. Don’t overmix the batter to keep the loaf soft. Store leftovers in an airtight container for up to 6 days or freeze for up to 3 months. Each slice contains about 12g of protein. Perfect for healthy meal prep or post-workout snacks!
