Description

This Grilled Honey Lime Chicken uses boneless skinless chicken thighs marinated in a sweet honey lime blend with warming spices. The grill caramelizes the honey into a sticky, bold glaze in under 15 minutes of cook time.   • 4 boneless skinless chicken thighs
  • ¼ cup lime juice (fresh or bottled)
  • 3 tbsp honey (or maple syrup)
  • 1 tbsp vegetable oil (or avocado oil)
  • 1 tsp garlic powder
  • 1 tsp paprika (or smoked paprika)
  • 1 tsp ground cumin
  • ½ tsp chili powder
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp freshly cracked black pepper
  • 2 tbsp fresh cilantro, minced (for garnish)

Instructions

  1. Preheat the grill to 375°F. Allow the grill to reach full temperature before the chicken goes on.
  2. Build the marinade: In a zip-lock bag or bowl, combine lime juice, honey, oil, garlic powder, paprika, cumin, chili powder, oregano, salt, and pepper. Mix until the honey is fully dissolved.
  3. Marinate the chicken: Add the chicken thighs, seal, and massage to coat evenly. Marinate for at least 30 minutes at room temperature, or up to 8 hours refrigerated.
  4. Grill first side: Place chicken smooth-side down on oiled grates. Cook undisturbed for 6 to 7 minutes.
  5. Flip and finish: Turn each thigh with tongs and cook 6 to 7 more minutes, until the internal temperature reads 165°F.
  6. Rest and garnish: Transfer to a plate, rest 5 minutes, then top with fresh cilantro and serve with lime wedges.

Notes

Pat chicken dry before adding to the marinade for better adhesion. Oil the grill grates before adding the chicken to prevent sticking. Use an instant-read thermometer, timing is a guide, but 165°F is the target. For extra caramelization, brush fresh (not used) marinade on the chicken after the first flip. Longer marinating (2–4 hours) produces noticeably more flavor throughout.
