  • ¾ English cucumber, diced
  • 1 pint grape tomatoes, halved

  • ½ cup crumbled feta cheese
  • ⅓ cup diced red onion
  • Dressing:
  • 1 cup Greek dressing OR
  • ¼ cup red wine vinegar
  • ⅓ cup olive oil
  • ½ teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Prepare the Dressing: In a small bowl, whisk together red wine vinegar, olive oil, garlic powder, oregano, salt, and pepper until fully combined.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Cook pasta until al dente according to package directions. Drain and rinse under cold water to cool completely.
  3. Combine Ingredients: In a large mixing bowl, add cooled pasta, cucumber, tomatoes, bell pepper, olives, feta cheese, and red onion.
  4. Toss with Dressing: Pour the dressing over the salad and toss until evenly coated.
  5. Chill for Best Flavor: Cover and refrigerate for at least 2 hours to allow flavors to develop.
  6. Serve: Toss again before serving and adjust seasoning if needed.

Notes
