  • 2 tablespoons taco seasoning
  • 1 can Rotel diced tomatoes with green chilies (10 oz)
  • 1 can black beans (15 oz), drained and rinsed
  • 1 can stewed tomatoes (15 oz)
  • 4 cups chicken broth
  • 4 oz cream cheese, softened
  • 1 large red bell pepper, chopped
  • 1 cup corn (optional)
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Sauté the vegetables: Heat olive oil in a large pot over medium heat. Add chopped red bell pepper and sauté for 3 minutes until soft and fragrant.
  2. Add the chicken and seasoning: Place the chicken breasts in the pot and sprinkle with taco seasoning. Sear each side for about a minute.
