Description
This Dorito Casserole layers seasoned ground beef, black beans, sour cream, and crushed Doritos under a blanket of melted Cheddar-Jack cheese for a bold, crowd-pleasing weeknight dinner that comes together in just 50 minutes. Slightly reminiscent of chilaquiles, this taco casserole with Doritos is fully customizable with your favorite chip flavor.
Ingredients
- 1 pound lean ground beef
- 1 cup chopped yellow onion
- 1 cup chopped red bell pepper
- 1 (1-ounce) packet taco seasoning
- 1/2 cup water
- 1 (14.5-ounce) can diced tomatoes and green chiles (such as ROTEL), drained
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup sour cream, plus more for serving
- 1 (9.25-ounce) bag nacho cheese or cool ranch Doritos, lightly crushed (about 5 cups)
- 3 cups shredded Cheddar-Jack cheese
- For Serving: 1 tomato chopped, 2 tablespoons fresh cilantro, 1/2 cup salsa
Instructions
- Gather Ingredients: Collect all ingredients and measure them before you begin.
- Preheat and Prep: Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 3-quart baking dish with nonstick spray.
- Brown the Beef: Cook ground beef in a very large skillet over medium heat until browned; drain any excess grease.
- Add Vegetables: Add onion and red bell pepper and continue cooking until tender, about 5 minutes.
- Season the Meat: Add taco seasoning and water. Simmer until thickened, about 5 minutes.
- Combine Filling: Stir in diced tomatoes and green chiles, sour cream, and black beans until fully combined.
- First Chip Layer: Sprinkle 1.5 cups crushed Doritos in the bottom of the prepared baking dish.
- First Meat Layer: Evenly spoon about half of the meat mixture over the chips.
- Second Chip and Cheese Layer: Top with 1.5 cups crushed chips and 1.5 cups shredded cheese.
- Final Layers: Repeat with remaining meat mixture, chips, and cheese.
- Bake: Bake in the preheated oven until melted and bubbly, about 25 minutes.
- Garnish and Serve: Top with diced tomato, green onion, and cilantro. Serve with salsa and additional sour cream.
Notes
Use any Dorito flavor you like. Do not press down the layers before baking; the chips need airflow to stay slightly crisp at the edges. For make-ahead prep, assemble without the top chip and cheese layer, refrigerate overnight, then add them before baking.
