Description

Ingredients

  • 12 large eggs
  • 1/3 cup mayonnaise (or half mayo and half Greek yogurt)
  • 2 tablespoons pickle relish (or finely diced dill pickle)
  • 1 1/2 teaspoons Dijon mustard (or yellow mustard)
  • Salt and freshly ground black pepper, to taste
  • Paprika, for garnish


Instructions

  1. Boil the Eggs: Place eggs in a saucepan and cover with cold water. Bring to a boil, then remove from heat, cover, and let sit for 12 minutes. Transfer to an ice bath to cool.
  2. Peel and Slice: Peel eggs carefully and slice them in half lengthwise. Remove yolks and place them in a bowl.
  3. Make the Filling: Add mayonnaise, pickle relish, and mustard to the yolks. Mash until smooth and creamy. Season with salt and pepper to taste.
  4. Fill the Eggs: Spoon or pipe the yolk mixture back into the egg whites evenly.
  5. Garnish and Serve: Sprinkle paprika or fresh herbs on top just before serving.

Notes

Use slightly older eggs for easier peeling. Chill eggs completely before peeling to prevent tearing. For variations, chives, or a dash of hot sauce for extra flavor.
