Ingredients

  • 1/2 pound ground beef (85/15)
  • 1 cup corn (canned, frozen, or fresh)
  • 2/3 cup condensed cream of mushroom soup
  • 1 cup cheddar cheese, shredded and divided
  • 1/3 cup whole milk
  • 1/4 cup sour cream
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 cup smoked beef, cooked and crumbled
  • 32 ounces tater tots (frozen)


Instructions

  1. Preheat the Oven: Preheat oven to 375°F (190°C).
  2. Brown the Ground Beef: Cook ground beef in a large skillet over medium heat until fully browned. Drain any excess fat.
  3. Build the Filling: Add corn, cream of mushroom soup, 1/2 cup cheddar cheese, milk, sour cream, onion powder, black pepper, and crumbled smoked beef to the skillet. Stir until evenly combined.

Notes

Use 85/15 ground beef for the best flavor without making the casserole greasy. Do not thaw the tater tots before baking, placing them frozen gives the crispiest result. Let the casserole rest 5 minutes before serving so the filling sets up properly.
