Instructions
- Preheat the Oven: Set your oven to 350°F (175°C) and line a loaf pan with parchment paper or grease it lightly.
- Mix the Wet Ingredients: In a large bowl, mash the bananas until smooth. Add eggs, cottage cheese, maple syrup, and vanilla extract. Whisk until fully combined.
- Add the Dry Ingredients: Stir in almond flour, baking soda, and cinnamon until a smooth batter forms. If your cottage cheese isn’t fully blended, that’s okay; it will melt into the bread as it bakes.
- Pour and Bake: Transfer the batter to the prepared loaf pan. Bake for 50 minutes, covering with foil after 30 minutes if the top begins to brown too much.
