  • 3 large eggs
  • 1/2 cup cottage cheese
  • 3 tablespoons maple syrup (adjust to taste)
  • 2 teaspoons vanilla extract
  • 2 1/2 cups almond flour
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • Optional mix-ins: 1/4 cup chocolate chips, walnuts, or blueberries

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) and line a loaf pan with parchment paper or grease it lightly.
  2. Mix the Wet Ingredients: In a large bowl, mash the bananas until smooth. Add eggs, cottage cheese, maple syrup, and vanilla extract. Whisk until fully combined.
  3. Add the Dry Ingredients: Stir in almond flour, baking soda, and cinnamon until a smooth batter forms. If your cottage cheese isn’t fully blended, that’s okay; it will melt into the bread as it bakes.
  4. Pour and Bake: Transfer the batter to the prepared loaf pan. Bake for 50 minutes, covering with foil after 30 minutes if the top begins to brown too much.
  5. Check for Doneness: Insert a toothpick into the center. If it comes out clean, your bread is ready. Let it cool completely before slicing.

Notes

Store in an airtight container for up to 3 days at room temperature, 5 days in the fridge, or 2 months in the freezer. Blend cottage cheese for a smoother texture. Perfect as muffins too, just bake for 20–22 minutes.
