Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon taco seasoning (store-bought or homemade)
- 1 1/2 cups chicken stock or broth
- 1 (15 oz) can black beans, drained
- 1 (15.25 oz) can whole kernel corn, drained
- 1 (16 oz) can chili beans, undrained
- 1 (10 oz) can diced tomatoes with green chilies
- 1 (14.5 oz) can stewed tomatoes
- 2 1/2 tablespoons ranch seasoning mix
- 1 (4 oz) can green chilies
- Salt and pepper, to taste
- Optional toppings: sour cream, shredded cheddar cheese, tortilla chips, green onions, avocado slices
Instructions
- Combine Ingredients: In a Dutch oven or large pot, add chicken, taco seasoning, broth, beans, corn, chili beans, tomatoes, ranch mix, and green chilies.
- Stovetop Method: Cover and simmer for 30 minutes until chicken is cooked through. Shred chicken with two forks and stir back into soup.
- Slow Cooker Method: Add all ingredients to slow cooker, cover, and cook on low for 6 hours. Shred chicken before serving.
- Instant Pot Method: Add ingredients, seal lid, and cook on high pressure for 10 minutes. Allow a natural release for 10 minutes, then quick release. Shred chicken and stir.

Notes
