  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 carrots, peeled and sliced
  • 2 ribs celery, diced
  • 1 tablespoon fresh parsley, minced
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • 1/4 teaspoon black pepper
  • 12 teaspoons salt, to taste
  • 2 boneless, skinless chicken breasts (or bone-in for richer broth)
  • 8 cups chicken broth (low-sodium preferred)
  • 6 ounces wide egg noodles (uncooked)

Instructions

  1. Prepare the Ingredients: Dice the onion, slice the carrots and celery, and mince the garlic and parsley. Set aside the parsley for garnish.
  2. Sauté the Vegetables: In a large soup pot, heat olive oil over medium heat. Add the onion, carrots, and celery. Cook for about 6 minutes until softened, stirring occasionally.
  3. Build the Flavor: Add garlic, basil, thyme, bay leaf, black pepper, and 1 teaspoon of salt. Stir and cook for 1–2 minutes until fragrant.
  4. Add Chicken and Broth: Place the chicken breasts in the pot and pour in the chicken broth. Cover and bring to a gentle boil, then reduce heat to low and simmer for 1 hour.
  5. Shred the Chicken: Remove chicken from the pot, shred it with two forks, then return it to the soup. Taste and season with more salt if needed.
  6. Cook the Noodles: Stir in egg noodles and simmer for 6–7 minutes, until tender. Remove bay leaf and discard.
  7. Finish and Serve: Add chopped parsley and stir to combine. Serve hot with bread or crackers for the perfect comforting meal.

Notes

Use bone-in chicken for a deeper flavor or rotisserie chicken for convenience. To make ahead, cook the soup without noodles and add them fresh when reheating. A squeeze of lemon before serving brightens the flavor beautifully.
