  • 4 tablespoons butter
  • 1 small yellow onion, diced
  • 1 stalk celery, diced
  • 1/2 cup carrots, julienned
  • 3 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 2 cups half-and-half
  • 4 cups chicken broth
  • 1/2 teaspoon thyme
  • 1/2 teaspoon mustard powder
  • 1 lb boneless skinless chicken breasts, or 2 cups cooked diced chicken
  • Salt and pepper to taste
  • 16 oz potato gnocchi
  • 1 cup fresh spinach, roughly chopped
  • Pinch of red pepper flakes (optional)

Instructions

  1. Sauté the vegetables: Melt butter in a large pot over medium heat. Add onion, celery, and carrots and cook for about 5 minutes until softened. Add garlic and cook for 1 minute.
  2. Build the base: Stir in flour and cook for 2 minutes until lightly golden.
  3. Add liquids: Slowly pour in chicken broth and half-and-half, stirring constantly to keep the mixture smooth.
  4. Season and cook chicken: Add thyme and mustard powder. Season chicken with salt and pepper, add to the pot, and gently simmer for 10–15 minutes until cooked through.
  5. Finish the soup: Remove chicken, dice, and return to the pot. Add gnocchi and simmer about 5 minutes.
  6. Add greens: Stir in spinach and red pepper flakes. Cook just until wilted, then serve warm.

Notes

The soup thickens as it simmers, so add a splash of broth or milk when reheating. Gnocchi cooks directly in the soup, no pre-boiling needed. This recipe also works well in the Slow Cooker with a slurry added at the end for thickness.
