Ingredients

  • 1 teaspoon anchovy paste (optional)
  • 1/3 cup finely grated Parmesan cheese (plus more for serving)
  • 1/4 teaspoon black pepper
  • 8 oz uncooked rotini or penne pasta
  • 2 hearts of Romaine lettuce
  • 2 cups shredded rotisserie chicken or chopped cooked chicken breasts
  • 1 cup croutons (optional)


Instructions

  1. Make the Caesar Dressing: In a medium bowl, whisk together Dijon mustard, lemon juice, Worcestershire sauce, mayonnaise, minced garlic, and anchovy paste until smooth. Stir in the grated Parmesan and 1/4 teaspoon black pepper. Set aside.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini and cook until al dente, about 10 minutes. Drain and transfer to a large serving bowl.
  3. Prep the Romaine: Cut the Romaine hearts into 1-inch pieces and add them to the bowl with the pasta.
  4. Add the Chicken: Add your shredded rotisserie chicken or chopped cooked chicken to the bowl.
  5. Dress and Toss: Pour the prepared Caesar dressing over the pasta mixture and toss well to coat everything evenly.
  6. Garnish and Serve: Top with croutons and extra Parmesan shavings. Serve immediately or refrigerate until ready to serve.

Notes

For the creamiest dressing, whisk the Parmesan into the mayo base rather than sprinkling it on top. Store dressing and pasta separately if making ahead, and add the romaine and croutons just before serving to keep everything crisp. For a fun twist, swap the rotini for cheese tortellini.
