  • 4 cloves garlic, minced
  • 1 (14.9 ounce) can non-alcoholic dark malt beverage or beef broth
  • ¼ cup tomato paste
  • 3 carrots, cut into 1-inch pieces
  • 2 ribs celery, cut into 1-inch pieces
  • 4 sprigs fresh thyme
  • 1 teaspoon white sugar
  • ½ teaspoon freshly ground black pepper
  • 2 ½ cups chicken stock, or as needed to cover
  • 4 cups mashed potatoes, for serving (optional)

Instructions

  1. Prepare the Ingredients: Gather all ingredients and cut the beef and vegetables as directed.
  2. Brown the Smoked Beef: Cook smoked beef in a heavy skillet over medium-high heat until lightly browned and aromatic. Transfer to a large stew pot, leaving the rendered fat in the skillet.
  3. Sear the Beef Chuck: Season beef chuck with salt and black pepper. Sear in the hot skillet until well browned on all sides. Transfer to the stew pot.
  4. Build the Flavor Base: Cook onions in the retained fat until lightly browned. Add garlic and cook briefly until fragrant.
  5. Deglaze the Pan: Pour in the dark malt beverage or beef broth, scraping up all browned bits from the skillet.
  6. Simmer the Stew: Transfer liquid to the stew pot. Add tomato paste, carrots, celery, thyme, sugar, black pepper, and enough chicken stock to cover. Bring to a gentle simmer, cover, and cook until beef is fork-tender.
  7. Thicken and Finish: Uncover and simmer until the stew thickens slightly. Remove thyme sprigs and adjust seasoning.
  8. Serve: Serve hot, optionally over mashed potatoes.

Notes
